Watermelon Agua Fresca


When I was in my twenties, I lived in Oklahoma City for about 5 years. The one thing that I was not prepared for was the heat (ok, the tornadoes and earthquakes too.) I started making agua fresca as a refreshing drink in the summer. This is nice alternative to a cocktail if you want to have something nonalcoholic. However, you could certainly stir in your favorite spirits to this as well. This is perfect for a backyard barbecue or relaxing on a patio. You can use a variety of fruit and herbs in agua fresca, but watermelon is my favorite during the summer months.
4 cups seedless watermelon, chopped
1 tablespoon agave
6 large mint leaves, plus more for garnish
Juice of 1 lime
1 cup cold water
1 cup ice
Purée all ingredients in a high-speed blender. Serve in individual glasses with ice and a garnish of mint.
