Walnut Sage Pesto
Pesto is one of those things I always have in my fridge. It is so handy when making a quick meal whether it is pasta or adding to a panini. This walnut sage pesto is my go-to version in the colder months. I like to add it to penne pasta with some roasted butternut squash, roasted root veggies, or add to a grilled cheese. It is equally delicious on pizza with some roasted veggies.
Walnut Sage Pesto Ingredients
1 cup fresh parsley
¾ cup walnuts, toasted*
1/3 cup fresh sage leaves
2 cloves garlic, peeled
zest of 1 lemon
1 tablespoon lemon juice
½ cup olive oil
1 teaspoon salt
freshly ground pepper
Recipe
In a food processer add the parsley, walnuts, sage, garlic, zest, and lemon juice. Process a minute or two, until ingredients are finely ground. Then add in the olive oil, salt, and pepper and process again. Taste to adjust seasoning. Store in the refrigerator for up to two weeks.
Makes about a cup of pesto
*To toast walnuts, spread out on a baking sheet and toast in a 350 degree oven for 7-10 minutes.
