Spinach, Caramelized Onion, and Gruyere Frittata
Frittatas are a great way to clean out random ingredients you have left in the fridge and are so easy to make. This one came about because I had some leftover caramelized onions and spinach that I had used on a pizza the night before. I threw in some remaining gruyere cheese I had, and it turned out to be a delicious combination. I like to serve this for brunch with smoked salmon tartines and a bowl of fresh fruit.
1 tablespoon butter
1 tablespoon oil
2 small red onions, thinly sliced
2 cups fresh spinach
6 eggs
½ cup cream or crème fraiche
½ cup gruyere cheese
Salt and pepper to season
Preheat oven to 375 and grease a pie dish. Add the olive oil and butter to a medium pan and heat on medium low. Once the butter is melted, add the onions. Cook about 15 minutes until the onions become caramelized and translucent, stirring often. Add in 2 cups of spinach and stir until wilted down. Remove the pan from heat.
In a medium bowl add the eggs and cream and whisk until combined. Stir in the spinach, onions, and cheese. Season with salt and pepper. Pour the mixture in the prepared pie dish and bake 30 minutes. Let cool 15 minutes before serving.
