Smoked Salmon Omelet
This omelet has been on frequent rotation for me lately and thought it was time I shared. It has the same great flavor combination as a smoked salmon tartine or bagel. This omelet makes a delicious high protein breakfast or a quick and easy dinner during the week when you don’t want to spend a lot of time cooking.
Ingredients
3 eggs beaten, seasoned with salt and pepper
1 oz smoked salmon, torn in bite size pieces
1 tablespoon garlic or chive cream cheese*
3 grape tomatoes, halved
sprinkle of fresh or dried dill
Directions
Grease an omelet pan and place over medium heat. Add the eggs and move around so the bottom of the pan is covered. Once the eggs start to congeal, turn the heat down to low and cook another minute. Add the smoked salmon to one side of the omelet. Dollop the cream cheese around the salmon. Add the tomatoes so they are evenly dispersed. Cook for about a minute and then flip the other half of the omelet on top of the salmon. Sprinkle with dill and enjoy.
Makes 1 omelet
*For dairy free cream cheese, I like Treeline’s Herb Garlic variety.
