Pumpkin Butter
Pumpkin butter is another seasonal favorite of mine and one of the first things I remember making when I was younger. It doesn’t feel like fall to me unless I have some pumpkin butter. I love putting it on toast, but it is also great on waffles, pancakes, crepes, yogurt, oatmeal, and more. It also makes a lovely hostess gift for Thanksgiving or any other holiday gathering.
Ingredients
1 can pumpkin puree
½ cup apple cider
¼ cup brown sugar
2 tablespoons maple syrup
½ teaspoon pumpkin pie spice
1/8 teaspoon salt
Directions
Add all the ingredients to a medium saucepan and bring to a boil over medium heat.
Reduce heat and simmer 20 minutes, stirring often. The pumpkin butter should darken and reduce by about half.
Let cool completely. Put in jars and refrigerate or freeze.
Makes about 2 cups
