Peach Burrata Salad
This salad is a twist on the traditional burrata with tomatoes and basil. Summer peaches, fresh basil, and balsamic glaze make this a simple and delicious seasonal meal. This salad is easy to make and looks impressive, so it is great to serve when you have company. Enjoy with some toasted crusty bread and chilled wine.
Per person
1 ball of burrata
1 ripe peach, sliced
6-8 basil leaves
drizzle of balsamic glaze
sea salt
sprinkle of fennel seeds
1 slice rustic bread, sliced diagonally
dab of butter
Place the bread in toaster right before making the salad. Add the burrata ball to a shallow salad bowl. Layer the sliced peaches around one side of the bowl. Tuck the basil leaves in so they are evenly spread out. Once the bread is done, spread a dab of butter on it and add to the bowl. Drizzle balsamic glaze over the top of the bowl. Add a sprinkle of sea salt and fennel seeds on top and enjoy!
Vegan friends, Miyoko’s Creamery makes a vegan fresh mozzarella that works well as a replacement to the burrata.
