Nutty Oatmeal Raisin Cookies

These nutty oatmeal raisin cookies are made with almond butter instead of butter, so they have some added protein and are a healthier option for a cookie. They are soft and chewy and make a great breakfast on the go or afternoon snack.

Ingredients

2 cups almond butter

1 cup brown sugar*

2 eggs

½ teaspoon cinnamon

1 teaspoon vanilla

pinch of salt

1 cup rolled oats

½ cup chopped pecans

½ cup raisins

Directions

Preheat oven to 350 degrees and grease two cookie sheets. 

In an electric mixer combine almond butter, sugar, eggs, cinnamon, vanilla, and salt until well combined. Fold in the oats, pecans, and raisins. Stir until incorporated.  

Use a medium cookie scoop to scoop dough onto the baking sheets, leaving two inches between each cookie. Bake 10-12 minutes. Let cool 5-10 minutes.

Makes about two dozen cookies

*You can sub ¾ cup maple syrup as well, but the cookies will be a bit flatter.
