Marinated Roasted Asparagus
Last summer I decided to try marinating asparagus to give it a little extra flavor. It turned out so well and now this is one of my favorite recipes for asparagus. I served it at a dinner party last week with some other roasted veggies and flat bread pizzas and it was a such a fun meal. This asparagus is really a great side dish to so many meals.
Ingredients
2 bunches of asparagus, ends trimmed
3 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon salt
freshly ground pepper
1 lemon sliced in quarters
Directions
Add the asparagus, olive oil, garlic, salt, and pepper to a large ziplock bag. Massage the bag so all the asparagus is coated. Let marinate for 4-6 hours, or overnight.
Preheat oven to 375 degrees.
Add asparagus to a parchment lined baking sheet so they are in one row without overlapping. Add the lemon slices on top and bake for 20 minutes. Test asparagus with a fork to ensure they are done.
Serve with the lemon slices on top.
