Loaded Avocado Toast
Avocado toast has become one of the most popular breakfast items in recent years. So simple yet so good. This version takes it up a notch and is a delicious casual brunch option to make for friends and family. I had a similar version at a little café in Chicago a few years ago and wanted to recreate it. Serve with a simple side salad for delicious plant-based meal.
Loaded Avocado Toast Ingredients and Recipe
2 pieces rustic bread (I like whole grain or sourdough)
4 tablespoons hummus
1 avocado, mashed
6 roasted tomatoes, homemade or store bought*
2 tablespoons balsamic glaze
salt
pinch of red pepper flakes
Toast the 2 pieces of bread. Spread each piece with 2 tablespoons of hummus. Then divide the avocado evenly on top of the hummus and spread. Add 3 roasted tomatoes on top of the avocado. Drizzle each slice with a tablespoon of balsamic glaze. Sprinkle with salt and a pinch of red pepper flakes.
Serves 2 but easily multiplied for more
*For store bought roasted tomatoes, I like the brand, Divina.
