Lemon Berry Crepes
I was given a jar of lemon curd recently and somehow after looking at it several times, decided to whip up these lemon berry crepes. I’m so glad I did! This was perhaps one of the best breakfasts I have ever made. So simple, yet so decadent. I was smiling while eating them and I know you will be too.
Ingredients for Lemon Berry Crepes
4 eggs beaten
1 cup milk
1 cup flour
½ teaspoon salt
2 tablespoons melted butter
zest of 1 lemon
4 cups mixed berries
½ cup lemon curd
powdered sugar for dusting
Directions for Lemon Berry Crepes
Whisk the first 6 ingredients together and let stand 30 minutes.
Grease a 10-inch crepe pan and place on medium low heat. Once the pan is hot, add 1/3 cup of batter to the pan and slowly rotate the pan so batter covers the surface. Cook about 1 minute and then flip and cook another minute. Repeat with remaining batter. I stack crepes on a plate as I cook the rest.
To serve, spread each crepe with a tablespoon of lemon curd. Fold the crepe in half and then in half again to form a triangle. Repeat with remaining crepes.
I serve two crepes per person with a cup of mixed berries and dusting of powdered sugar.

I haven’t tried veganizing but I think flax egg, vegan butter, and almond milk could work. I have not seen store bought vegan lemon curd but I have seen a lemon spread. This is what I would use for a vegan version and still get the lemon flavor
