Lavender Honey Syrup


One of my favorite drinks to order at a coffee shop is a lavender latte. The touch of lavender adds just a little something special. I have seen lavender syrup a few times at the farmers’ market and specialty shops, but I decided I would make my own version with honey. I love to add it to coffee with frothed milk for an at home lavender latte. It is also delicious stirred in earl grey tea with milk for a quick London Fog latte, and equally good in mint tea. This syrup makes a lovely gift and I love that it came out with a lavender hue.
1 ½ cups water
1 ½ cups honey
¾ cup culinary lavender buds
Add all ingredients to a saucepan over medium high heat and bring to a boil. Stir until the honey is dissolved. Remove from heat and let sit overnight. The next day, strain the liquid into a jar. Store in the fridge for 2 weeks. This recipe fills slightly more than an 8.5 oz jar (pictured above.)
