Lavender Chocolate Mousse

My favorite café that inspires me daily is MAMAN in NYC. I hope they come to Chicago one day but until then I will continue to visit their locations in NYC and peruse their cookbook. On my last trip there, which was during the holiday season, I had their lavender hot chocolate. The combination together was perfection and I have made lavender hot chocolate at home ever since that trip.

I decided to combine these two flavors into another sweet treat with this simple yet decadent dessert. The creaminess comes from avocados and make this a great vegan dessert option that will make your friends and family feel spoiled. This does require a little advance planning, but it’s worth it.

Lavender Chocolate Mousse

Ingredients for Chocolate Mousse

4 medium/large avocados, ripe

2/3 cup cacao powder

two pinches of salt

3 teaspoons vanilla

2/3 cup almond milk

2/3 cup lavender infused maple syrup*

Ingredients for Lavender Maple Syrup

1 cup maple syrup

3 tablespoons dried lavender

Directions for Chocolate Mousse

In a small saucepan, simmer the maple syrup and lavender for 5 minutes. Let rest 4-6 hours or overnight.  Reheat over low heat until the maple syrup becomes thinner, 3-5 minutes. Using a small mesh sieve, strain the maple syrup into a glass jar. I make this two days in advance of serving the mousse. 

To make the mousse, add the flesh from the avocados to a food processer with the cacao, salt, vanilla, milk, and lavender syrup. Blend until completely smooth. It should look nice and creamy. I like to spoon it into the dessert cups and chill overnight, or you can transfer the mousse to one large bowl and chill overnight. It is important to let this sit overnight so the flavors meld correctly. 

To simplify the day of, have your syrup premade in advance. You can use the lavender maple syrup on pancakes, waffles, or stir into your coffee. I like to make this syrup often and keep the jar in my fridge. The main thing to remember with this recipe is the lavender syrup needs to rest ideally overnight and the mousse needs rest one night before serving.

Serves 4-6

*This is also delicious with plain maple syrup if you prefer but the lavender adds a special touch.
