Irish Coffee
Irish Coffee and I were first introduced on a weekend getaway in Dublin while I was studying abroad in college. My friend Susan and I had been trapsing around on a cold rainy day stopping in the old library at Trinity College to see the Book of Kells and later popping in the famous Temple Bar to take a peek. By the afternoon we wanted a little something that would warm us up. I remember standing outside a pub checking out the menu and seeing Irish Coffee on the menu. Sold! That first sip was so delicious, slightly sweet and warming, perfect for a cold rainy day. My Irish eyes were smiling.
Irish Coffee
Ingredients for Irish Coffee
½ oz Jameson Irish Whiskey
¾ oz Baileys Irish Cream
1 teaspoon brown sugar
1 cup strong coffee
¼ cup whip cream
Directions for Irish Coffee
In an eight-ounce glass mug, add the whiskey, Baileys, brown sugar, and coffee, leaving about half an inch at the top. Stir with a long spoon so the brown sugar dissolves. Top with a dollop of whip cream.
