Hot Milk Cake

This is an old family recipe that I have been enjoying my entire life. I have never encountered a dessert quite like it anywhere else and I don’t think many other people have either. When I serve it, I always get several questions about it. I have fond memories of my mom making this cake and letting me lick the beaters, it always put a big smile on my face. This cake is best served warm but also great the next day for breakfast with a cup of coffee.

Hot Milk Cake

Ingredients for the cake

1 cup flour

1 teaspoon baking powder

½ cup milk

¼ cup butter

2 eggs

1 cup sugar

½ teaspoon vanilla

pinch of salt

Ingredients for the topping

2 tablespoons butter

5 tablespoons brown sugar

2 tablespoons milk

1 cup sweetened shredded coconut

Preheat the oven to 375 degrees and grease a square baking pan. In a medium bowl, sift together the flour and baking powder. 

Then, in a small saucepan heat the milk and butter over medium heat until the butter is melted.

In the bowl of an electric mixer, beat the eggs and slowly add the sugar. Then add in the flour mixture, followed by the warmed milk. Add in the vanilla and pinch of salt and beat until well mixed. Pour the batter into the pan and bake for 35 minutes. Let cool slightly. 

While the cake is cooling heat the butter, brown sugar, and milk in a small pan over medium heat. Once melted, add in the coconut and stir to combine. Add the topping evenly over the top of the cake. You can serve like this, or you can broil the cake 1-2 minutes until the coconut is lightly browned (watch closely.) 

Serve slightly warm.
