Holiday Chicken or Turkey Salad
This salad is inspired by one that I had many years ago at Marshall Fields in Chicago. I grew up going to this wonderful department store and always found it so magical at Christmas, especially the tree in the Walnut Room and the decorated windows outside. They also had dancing elves that performed around the store during the holidays. I liked to see them but only from a distance as I was not quite sure what I thought about them. Marshall Fields will always hold a special place in my heart and although the name has since changed, I still love a trip to the Walnut Room for lunch under the tree each year. This holiday salad is a great way to use up any extra turkey after Thanksgiving. Serve as is or on your favorite toasted bread.
Salad Ingredients
4 cups chicken or turkey, chopped
1 cup dried cranberries
1 cup celery, chopped
½ cup pecans, chopped
½ cup goat cheese or feta cheese
Dressing Ingredients
3 tablespoons apple cider vinaigrette
¼ cup olive oil
2 teaspoons Dijon mustard
2 tablespoons maple syrup
1 teaspoon salt
freshly ground black pepper
Directions
In a small bowl whisk together all the dressing ingredients.
In a large bowl add the chicken, cranberries, celery, and pecans. Add in the dressing and stir to combine. Sprinkle with goat cheese or feta cheese on top.
Serves 3-4
