French Apple Cake
Fall baking is not complete without a sweet treat with apples. My go to recipe is my grandmother’s apple crisp recipe but I thought I should venture out a little bit and add something else to my repertoire. This French apple cake is so buttery and good. It has a delicate flavor with a slight hint of rum and delicious with a dollop of whipped cream. If you don’t finish it all for dessert, it is perfect with a cup of coffee or tea for breakfast the next day.
Ingredients
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
1 stick butter, room temperature
1/3 cup sugar
1/3 cup brown sugar
2 eggs
½ teaspoon vanilla
3 tablespoons rum
3 apples, peeled seeded, and cubed in ¼ inch pieces
2 tablespoons sugar (for the top of the cake)
powdered sugar to garnish (optional)
Directions
Preheat oven to 350 degrees. Grease a round baking pan or springform pan.
In a medium bowl, mix the flour, baking powder, and salt.
In a bowl of an electric mixer, cream the butter and sugars. Add in the eggs one at a time. Then add in half the flour mixture, vanilla, and rum. Once combined, mix in the remaining flour.
Remove the bowl from the electric mixer. Stir in the apples with a spatula. Pour the batter into the greased baking pan. Sprinkle the 2 tablespoons of sugar evenly over the top. Bake for 40-45 minutes.
Once the cake is cool, sprinkle with powdered sugar if desired.
Serves 6-8
