Everything Cookies
One thing I have always loved about cooking is making things with the ingredients I have on hand. I love using things up! These cookies are a great way to clean out your pantry. You can adjust the add ins to your liking. They are hearty cookies, great on the go, and make an excellent breakfast cookie.
Ingredients
1 stick unsalted butter, room temperature
¾ cup brown sugar
¼ cup sugar
1 egg
1 ½ teaspoons vanilla
1 cup flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 ¼ cup old fashioned rolled oats
¾ cup raisins
¾ cup coconut
¾ cup chocolate chips
¾ cup pecans
Directions
In the bowl of an electric mixer, beat butter and sugars until creamy. Add in the egg and vanilla and beat. Add in the flour, baking soda, salt, and cinnamon. Beat until well combined. Stir in the oats, raisins, coconut, chocolate chips, and pecans. Cover the bowl with plastic wrap and refrigerate for 1 hour.
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. Using a medium cookie scoop, portion the dough on the baking sheets. Press down each cookie slightly with two fingers. Bake 7 minutes, then rotate the pans in the oven to ensure even baking. Bake another 7 minutes. Let cookies rest on the pan for about 5 minutes before removing. This helps them firm up so they don’t crumble when taking off the baking sheet.
Makes 20-22 cookies
