Christmas Fettuccine
One of the coziest scenes in The Holiday is Amanda curled up by the fire on Christmas Eve, wrapped in a cozy blanket with a plate of fettuccine and glass of wine. It looked so idyllic it inspired me to create a version of it for myself on Christmas Eve 2020. While it did not make up for the lack of family, it was a cozy Christmas Eve in my little Chicago apartment.
Christmas Fettuccine
Ingredients
3 tablespoons butter
¾ cup heavy cream
¾ cup freshly grated parmesan plus more for garnish
pinch salt
freshly ground pepper
1 9oz package fresh fettuccine
1 teaspoon truffle oil
handful basil leaves chopped
Recipe
Place a large pot of water over high heat, add a pinch of salt and bring to a boil.
Meanwhile, place a sauté pan over medium heat and melt the butter. Add in the cream and cook about 5 minutes until the sauce reduces, stirring often. Add in the parmesan and stir until melted. Season with salt and pepper. Reduce the heat to a very low simmer.
Add the fettuccine noodles to the boiling water and cook according to the package directions. Drain the noodles, reserving ½ cup of the pasta water. Add the fettuccine to the sauce and stir. If the sauce is too thick, add in a little bit of the pasta water. Stir in the truffle oil at the end. Serve in pasta bowls and garnish with parmesan and fresh basil.
