Chia Pudding
Chia seeds have been part of my diet since I started running seven years ago. I was drawn to them because they support stamina, endurance, and inflammation. They are a magical little super food high in protein, fiber, vitamins, and omega-3.
My favorite way to use chia seeds is in chia pudding. I alternate between making vanilla with almond butter and chocolate with peanut butter and top with an assortment of fruit, nuts, granola, and cacao nibs. This pudding is so creamy and delicious and is perfect before or after a good workout.
Chia Pudding
Vanilla Almond Butter Chia Pudding
½ cup chia seeds
2 cups unsweetened almond milk
Two teaspoons vanilla
2 tablespoons honey plus more for drizzle
2 tablespoons almond butter
banana, berries, and granola for toppings

Chocolate Peanut Butter Chia Pudding
½ cup chia seeds
2 cups unsweetened chocolate almond milk
2 teaspoons vanilla
Two tablespoons honey plus more for drizzle
2 tablespoons peanut butter
banana, berries, and cacao nibs for toppings
Chia Pudding Recipe
Divide the chia seeds equally between 2 small bowls. Mix the milk, vanilla, honey, and nut butter in a blender. Pour half of the liquid in each bowl and lightly whisk. Let sit for a few minutes and whisk again. Chia seeds tend to clump up so continual whisking is needed. Cover the bowls and let sit overnight in the fridge. When ready to eat, add the toppings and drizzle with more honey. For an on-the-go version, you can make this in mason jars.
