Caprese Burgers
These burgers are inspired by one of my favorite summer salads, caprese. The pesto in the burger with the heirloom tomatoes, fresh mozzarella, and balsamic glaze make for a mouthwatering burger. I like to serve with sweet potato fries or grilled corn.
Ingredients
1 pound ground chicken or turkey
½ cup pesto divided (I use my creamy cashew pesto)
2 cloves garlic, minced
½ teaspoon salt
4 slices heirloom tomato
mixed greens
balsamic glaze
1 -2 balls fresh mozzarella, sliced
4 brioche hamburger buns
Directions
Mix the ground meat, ¼ cup of the pesto, garlic, and salt in a medium bowl until well combined. Form into 4 hamburger patties. Heat a grill pan over medium-high heat and lightly grease. Add the hamburger patties and cook about 4 minutes on each side.
Remove from the pan. Add the buns to the pan face side down in batches for a few minutes to lightly toast.
When ready to assemble, place a few mixed greens on the bottom of the bun, top with the tomato slice, mozzarella, and burger. Drizzle the burger with balsamic glaze. Spread the remaining pesto on the other half of the burger buns. Enjoy!
