Banana Nut Bread
We are just about at that time of year where everything is apple and pumpkin, a time of year I adore. Since this is the last week of summer, I wanted to share my banana bread recipe before heading into all things fall. Banana bread is one of those true comfort foods that we all turn to when we need a pick me up (which is why the whole country was making banana bread most of 2020 and 2021.) I perfected this recipe in the last year and love to have it warm with a little butter, peanut butter, or chocolate hazelnut spread on top. You can also throw in chocolate chips if you want a more decadent version.
Banana Nut Bread Ingredients
1 ¾ cup flour
½ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup butter, room temperature
¾ cup brown sugar
2 eggs
1 teaspoon vanilla
3 bananas, mashed
¼ cup milk
½ cup chopped walnuts or pecans (optional)
Instructions
Preheat oven to 350 degrees and grease a bread pan. In a medium bowl, sift together the flour, baking soda, baking powder, and salt. In a bowl of an electric mixer, beat the butter and brown sugar until creamy. Add in the eggs and beat until smooth. Then add in the bananas, vanilla, and milk. Don’t overmix, it should be a little lumpy. Add in the flour mixture until well combined. Stir in the nuts with a spatula. Transfer the batter to the bread pan and bake 55-60 minutes, until a knife comes out clean. Let rest in the pan for 10 minutes, then cool on a rack.
Makes 1 loaf
*If you want to ensure there are no chunks of banana, you can blitz the bananas in a blender.
