Asparagus and Goat Cheese Quiche

This quiche combines onions, leeks, asparagus, and goat cheese for the perfect spring flavor combination. I served it on Easter and have also made it for Mother’s Day. Serve with a small salad on the side and a mimosa for any spring celebration.

Asparagus and Goat Cheese Quiche

Ingredients for Asparagus Goat Cheese Quiche

1 pie crust (store bought or homemade)

2 tablespoons butter

2 tablespoons olive oil

1 leek, rinsed well and diced*

1 small onion, diced

3 cloves garlic, minced

1/3 cup crumbled goat cheese

1 cup half and half

2 eggs

8 asparagus spears, trimmed

salt and pepper

Directions for Asparagus Goat Cheese Quiche

Pre-heat oven to 375. Place pie crust in pie pan and press firmly against the edges. Poke holes in the crust with a fork. If desired, pinch the edges of the pie crust for an extra special touch. Place a piece of parchment paper over the crust and place pie weights on top. Bake for 15 minutes. Remove from the oven and let cool slightly, remove the parchment paper and pie weights. 

Meanwhile heat oil and butter in sauté pan over medium heat. Once melted, add the onion and leek, and cook until soft, about 15 minutes. Add in minced garlic and cook another minute. Turn off the heat.

Fill a medium pot with water and bring to a boil. Add in the asparagus spears and cook 30 seconds. Do not cook longer or the asparagus will start to lose its color. Add asparagus to a bowl of cold water or immediately rinse with cold water.

In a small bowl whisk the eggs and stir in the cream. Add in the goat cheese and sprinkle with salt and pepper. 

Transfer the onion mixture on top of the baked pie crust. Pour the egg mixture over the onion filling. Place the asparagus spears on top so they are evenly spread out.

Bake 35-40 minutes

Serves 4-6

*Tip on leeks:

I trim the ends and slice horizontally down the middle. I run my fingers through the different layers to rinse out any dirt. Also, I place them in a bowl of water cut side down and let them sit for a few minutes. Any remaining dirt will fall to the bottom of the bowl.
