Apricot Dijon Chicken

This French inspired apricot Dijon chicken recipe is so easy and such a crowd pleaser.  You can easily make this anytime with a few ingredients in your pantry. I combined two different types of French mustard and apricot jam and let it marinade overnight. Before it goes in the oven, add a splash of wine and a few sprigs of rosemary. Throw on some French music and have a glass of wine while it bakes for a relaxing start to your evening.  Serve with your favorite veggie like the green beans in the picture above, or grain. 

½ cup apricot jam

2 tablespoons Dijon mustard

Two tablespoons wholegrain mustard

2 tablespoons olive oil

6 dried apricots sliced

½ teaspoon salt

freshly ground black pepper

4 chicken breasts

½ cup white or rosé wine

4 sprigs fresh rosemary (or 1 teaspoon dried rosemary)

The night before you plan to serve this, mix the jam, mustards, oil, dried apricots, salt and pepper in a small bowl. Pour a little of the marinade in the bottom of a baking dish then add the chicken to the dish. Cover with the remaining marinade. Make sure each piece is fully coated in the marinade. Cover with a lid or saran wrap and refrigerate overnight.

Preheat the oven to 350 degrees

Remove the lid/saran and pour the wine evenly over the top. Place a rosemary sprig on each chicken breast or sprinkle 1 teaspoon dried rosemary evenly over the chicken. Bake 20 minutes and take out to baste the chicken (spoon liquid from the bottom of the pan back over the chicken.) Bake another 20 minutes. Chicken should be at 165 with a meat thermometer. Let rest 5 minutes before serving. Make sure to put some of the extra juices from the pan over the chicken, especially when serving with a grain.

*I love the French mustard brand Maille which is what I used for both mustards. These can be found at most grocery stores. For apricot jam I am partial to Bonne Maman and St. Dalfour (sweetened only with fruit juice.)
