Blood Orange Granola

  

One Saturday I was strolling through the Farmer’s Market and came across an olive oil stand with blood orange olive oil. I love citrus flavors, so I grabbed it instantly. I wasn’t entirely sure what I would make with it, but I knew I would think of something fun. I decided to try it in a batch of granola and I couldn’t believe how well it came out. When I am asked about a recipe that I am really proud of, this is high on the list. Friends and family are always requesting batches of it when I see them. This granola reminds me of something you would find at a high-end café, a bit luxurious. If you can’t find blood orange olive oil locally, it is easily accessible online. 

6 cups old fashioned oats

3/4 cup sliced almonds

3/4 cup pumpkin seeds

3/4 cup real maple syrup

3/4 cup blood orange olive oil

1 ½ teaspoon salt

1 ½ teaspoon cinnamon

1 ½ teaspoon vanilla

1/2 cup of raisins

Preheat oven to 350 degrees. Grease a large sheet pan with cooking spray. Mix all ingredients except raisins in a large bowl until well combined. Pour onto baking sheet and spread out evenly on the pan. Bake for 12 minutes. Remove pan from oven and stir the granola. Spread out evenly on the pan.  Bake another 12 minutes. Let cool. Then add in raisins to combine. Store in an airtight container for up to 2 weeks or freeze for up to 3 months.

Serves 8-10

Serving suggestion-enjoy with yogurt and fruit for a yogurt parfait. It is also good with milk and topped with berries
