My Favorite Pizza

In 2005, I studied abroad in Cambridge England. It was the time of my life and opened my mind to so many new experiences, including food.  My friend Susan and discovered a pizza place called Pizza Express (the name really does not do it justice.) It was casual but so nice. They played jazz in the evenings and it was affordable for college students. I remember looking at the menu and spotted a pizza with sundried tomatoes, one of my favorite things. However, this pizza also had goat cheese on it. I had not had goat cheese at that point but decided to give it a try. This began my love of goat cheese! This recipe is inspired by the pizza I had there almost 19 years ago and have been making it ever since. Simple and delicious.

Ingredients

This is for a 10-inch pizza. Adjust ingredients for a larger size.

1 pizza crust

¼ cup marinara sauce

1 cup shredded mozzarella cheese

2 tablespoons crumbled goat cheese

2 tablespoon sundried tomatoes

Directions

Preheat oven based on your pizza crust directions. 

Spread the marinara evenly on the crust and cover with the marinara sauce. Scatter the goat cheese and sundried tomatoes on top. 

Bake according to crust directions. I baked mine at 400 for about 13 minutes.

Makes one 10-inch pizza
