Earl Grey Chocolate Chip Cookies

These soft and chewy cookies combine two classics, chocolate chip cookies with a hint of earl grey tea. I am always up for a spot of tea and have discovered there are so many ways to get creative with it in the kitchen, especially when baking. Enjoy these delicious cookies with a glass of milk or a warm drink. 

1 stick unsalted butter, room temperature

¾ cup brown sugar

¼ cup sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon baking soda

½ teaspoon salt

2 teaspoons finely ground Earl Grey tea (two tea bags)

1 ½ cup chocolate chips 

In the bowl of an electric mixer, beat butter and sugars until creamy. Add in the eggs and vanilla and beat until combined. 

Add in the flour, baking powder, salt, and tea and beat until well combined. Stir in the chocolate chips. Cover the bowl and refrigerate 1 hour. 

Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Use a medium cookie scoop to portion dough evenly on baking sheets. Press down on the dough balls with two fingers to slightly flatten. Bake 7 minutes, then rotate the pans in the oven to ensure even baking. Bake another 7 minutes. Place cookies on a cooling rack. Enjoy while still warm.

Makes about 18 medium size cookies
