Molasses Cookies
These molasses cookies are soft and chewy with the perfect amount of spice. I find it hard to stop after one. They are delicious with a warm cup of tea on a cold afternoon and make a great addition to a holiday dessert table. I also like to wrap these in cellophane bags and give them as gifts during the holiday season.
Ingredients for Molasses Cookies
2 cups flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ginger
2 teaspoons cinnamon
½ teaspoon cardamom
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
¾ cup butter, room temperature
¾ cup brown sugar
1 egg
1 teaspoon vanilla
1/3 cup molasses
½ cup sugar for coating
Recipe
In a mixing bowl, whisk together the flour, baking soda, salt and spices and set aside. In the bowl of an electric mixer, beat the butter and brown sugar until creamy. Add in the egg, vanilla, and molasses. Slowly add in the flour mixture and beat until well combined.
Cover the bowl and refrigerate for 1 hour.
Preheat oven to 350 degrees. Grease two baking sheets with cooking spray or use parchment paper.
Using a cookie scoop, scoop out the dough and form dough balls, then roll in the sugar. Spread the dough balls out evenly on the cookie sheets (about 12 per pan.) Using two fingers, lightly press down on the top of each cookie to flatten a bit.
Bake the cookies 12 minutes. Let cool on the pan for a few minutes then transfer to a cooling rack.
Makes about 2 dozen cookies
