Creamy Mashed Potatoes

“Just serve me tomatoes and mashed potatoes, give me the simple life” This line from the song by Etta Jones, has always resonated with me. I love simplicity and enjoying life’s everyday pleasures. An evening with family and friends with good food and conversation is what life’s all about to me. This recipe was complete serendipity. I had the potatoes almost done but wasn’t quite satisfied and then I remembered I had some crème fraiche leftover from another recipe. Also, I decided to throw it in and remember saying, “wow” when I tasted them.  I love enjoying these on a cold winter day with coq au vin or on my favorite day, Thanksgiving.

Creamy Mashed Potatoes

Ingredients for Creamy Mashed Potatoes

2.5 pounds yellow or red potatoes (peeled or unpeeled,) halved

3 tablespoons butter

½ cup crème fraiche 

½ cup milk

1 garlic clove minced

1 teaspoon salt

½ teaspoon pepper

Recipe

In a large pot of water add potatoes and bring to a boil. Cook 20 minutes until tender. Drain potatoes and return to the pot and mash with a potato masher over medium low heat.  Then add in butter, crème fraiche, and milk and stir until creamy. Add in the garlic and salt and pepper. If you want creamier potatoes add more milk.

Serves 6-8
